Tortilla Chip Casserole
Food rarely goes bad at my house and not just because my five-year old already eats like he is 15. But because I regularly scan the contents of my fridge and pantry in an effort to use everything up before it turns into a science experiment! This recipe is a result of me getting creative with the last 1/3 of a bag of tortilla chips. My husband was reluctant to take a bite when he had heard what I had made it with, but was pleasantly surprised after he took a bite! Now, the whole family looks forward to this casserole when there are nothing but crumbs left at the bottom of the tortilla chip bag. This recipe is very versatile too, you can change up ingredients to reflect your families tastes. If you don’t have or like pinto beans, use kidney or black beans instead. I am a big fan of using what you have on hand. If your family likes more or less flavor, adjust spices accordingly!
Chicken Tortilla Chip Casserole
Tomatoes: You will need 1 14-ounce can of diced tomatoes for amazing flavor in this dish.
Cumin: Add in 1/2 teaspoon of cumin to give this some amazing flavor.
Taco seasoning: For more added deliciousness, use 1/2 teaspoon of taco seasoning too.
Salt: Use a pinch or two of salt for added flavor, according to your taste preference.
Tortilla chips: To add in some amazing texture, you need 1 1/2 cups of crushed tortilla chips.
Chicken: Use about 1 cup of diced and cooked chicken for added protein for this meal. I like to use the canned chicken for recipes like this, it is easy and tastes great.
Chilies: Add in 1 4-ounce can of green chilies for a fantastic flavor addition to this nacho casserole.
Beans: Using 1 14-ounce can of beans, whatever you love best or have on hand. I like to use pinto, kidney, or black beans, I use whatever I happen to have in the pantry at the time.
Cream of chicken: You need 1 14-ounce can of cream of chicken soup to create a nice consistency to the casserole.
Sour cream: Adding in 1/4 cup of sour cream makes the casserole mixture a lovely creamy texture.
Milk: For added moisture, use 3/4 cup of milk for this recipe.
Cheese: Use 1/2 cup of shredded cheese for this casserole, I like to use the Mexican cheese blend or the Colby blend.
How to make Chicken Nacho Casserole
Prep
Start by preheating the oven to 350 degrees F.
Assembly
Begin by draining most of the liquid from the can of diced tomatoes and pour in an 8×8 baking dish. Then, sprinkle the tomatoes with cumin, taco seasoning and salt, stir it a little to mix it up.
Next, crush the tortilla chips and layer over the tomatoes.
After that, layer the cooked and shredded chicken over the chips, then add the green chilies and whatever your choice of beans is.
Lastly, in a separate small bowl combine the cream of chicken soup, sour cream, and milk. Stir this mixture well and then pour over the top of the ingredients in the baking dish.
Bake
Place the baking dish in the preheated oven and bake for about 25 minutes. Then, spread the cheese on top and let it melt in the oven for an additional 2-3 minutes.
If desired, sprinkle a few cilantro leaves on top for added flavor!

I like the recipe but the instructions are not quite right. It says lay the crushed chips over the black beans, then the next step you are mixing the beans in with what is left? Does it go tomatoes, beans, chips everything or tomatoes, chips everything?
