How do you make curry chicken?
My recipe for chicken curry is actually really simple to make! Start by sautéing basic yellow curry powder (found in the spice section of the grocery store) with chopped onions and garlic. Let this mixture sauté for 3-4 minutes on medium heat, to allow the flavors to meld. I tried to skip this step once and just tossed everything in the pot at once and the flavor of the curry wasn’t near as amazing! Add the chicken and continue to cook. Then you add the coconut milk, diced tomatoes, and a little bit of sugar to cut down on the acidity and let that mixture simmer for 10 minutes. I like to serve my chicken curry over rice. That’s it!
What goes into a Chicken Curry recipe?
While I tend to purchase a variety of different brands for the various ingredients in this recipe, I’ve always used Hunt’s Diced Tomatoes. They taste great and I can find them everywhere- most of the time, on sale! Hunt’s prepares their tomatoes differently than other brands and you can taste the difference. Tomatoes are vine ripened and are canned within hours of being picked. Their tomatoes are peeled using steam- no chemicals involved. All this helps their canned tomatoes to be sweet, flavorful and ready to be made into dinner!

Coconut Curry Chicken ingredients
- 2 TBSP cooking oil
- 1 ½ tablespoons curry powder
- 1/2 cup diced sweet onion
- 2 cloves minced garlic
- 2-3 boneless, skinless chicken breasts, diced
- 1 (14 ounce) can coconut milk
- 1 (14.5 ounce) can stewed, diced tomatoes
- 3 tablespoons sugar
- salt and pepper to taste
How to cook Coconut Chicken Curry Recipe:
- Heat oil in a large skillet over medium heat.
- Add curry, onions, and garlic and mix thoroughly. Cook for 3-4 minutes, stirring occasionally, letting the flavors meld.
- Add chicken, tossing lightly to coat. Season chicken with salt & pepper. Reduce heat to medium, and cook for 5 minutes, until chicken is mostly cooked through.
- Add coconut milk, tomatoes, and sugar and stir to combine. Heat until lightly bubbling, then reduce heat and simmer for 10 minutes.
- Serve chicken over rice. Store leftovers in an airtight container in the fridge.

Chicken Curry with Coconut Milk
You use a can of coconut milk in this chicken curry recipe. There are several great brands, but be sure to use one that says “unsweetened.” The coconut milk you use in this recipe is from a can. Coconut milk is the liquid that comes from the grated pulp of a coconut. Coconut milk from a can (as opposed to the coconut milk you get in a carton from the dairy section of the grocery store) is thick and adds a wonderful flavor and texture to chicken curry. Sometimes the coconut milk separates and you see a thick white solid mass and cloudy water in the can when you open it. It’s fine! Just add both the water and the thick coconut milk to the pan and they’ll combine as they heat up.
Can chicken curry be frozen?
Yes, you can freeze chicken curry! It’s actually one of my favorite freezer meals ever. Just double the recipe and make a big batch, then spoon half into an airtight freezer container. I store chicken curry in the freezer for up to 4-6 months. When you’re ready to eat it, just defrost on the countertop, then transfer the curry to a saucepan and heat over medium until just barely bubbling. Serve over fresh steamed rice and dinner is served!
Is chicken curry spicy?
This is a family-friendly chicken curry recipe so it is not spicy. We use just enough curry powder to make it flavorful, but not enough to add spiciness to the point where most kids would not eat it. If you’d like to add some spice, you can increase the amount of curry powder you add to the recipe.
What is curry spice made from?
Curry powder is an Indian spice made with a combination of turmeric, chili powder, cumin, coriander, ground ginger and pepper. Basic yellow curry powder can be found on the spice aisle of the grocery store and is mild curry unless otherwise indicated.
How long can chicken curry last in the fridge?
Chicken curry will last 5-7 days if stored in an airtight container in the refrigerator. This coconut chicken curry recipe is wonderful the day it’s made but I personally think the leftovers are even better! Just serve up a portion over leftover rice and heat in the microwave for an amazing lunch.
