Tips to make a fast recipe for Beef and Broccoli:
Here are a few tips and tricks for making this easy to make recipe even EASIER. It is great for busy weeknights, you can prepare ahead and this dinner can come together so quick.
- Thinly slice the beef ahead of time. I like to buy a 3-lb roast, trim it, slice the beef thin and freeze it in 2 portions. Take out one portion the night before and it is thawed and ready to use when you are cooking dinner.
- Make the marinade earlier in the day and combine it with the beef. Cover and refrigerate, then take it out and proceed with the recipe when you are ready to cook.
- Instead of using fresh broccoli you can use two 12-oz bags of frozen broccoli florets. Microwave them for the indicated time and when you put the recipe together it will only take about 10 minutes!
