I knew I wanted to make some version of Caprese, and I also knew that my actual preparation completely depended on the type and size of tomatoes and mozzarella that would be available the day before this party. One of my fabulous coworkers gave me a few containers of their "Sweet 100" tomatoes, and although I was going to head to the Italian store for some fresh mozzarella, I happened by these little balls at *gasp* WAL-MART! Who knew? Wal-Mart! Sure beats cutting up my own:) A little fresh basil, some toothpicks, and an hour of stabbing skewers later- voila! Caprese pops!
Just prior to serving I drizzled them with olive oil, salt, pepper, and a little balsamic (optional).
