I’ve had a go-to caramel dip recipe for years, but I wanted to try something new, so I tested two additional recipes with completely different ingredients and flavor profiles. After making and tasting all three (and even bringing them to a family dinner where about 15 people cast their votes), it was nearly impossible to choose a favorite. While two recipes edged out the third, there still wasn’t a clear winner. The result? Three deliciously unique caramel dips that each bring something special to the table—and all are guaranteed to satisfy those caramel cravings.

- Control the Heat Carefully (Especially Recipe #3): When making the classic caramel, keeping the temperature within the soft ball stage (234–240°F) is key—too low and it won’t set properly, too high and it can turn hard or develop a burnt taste.
- Adjust Cinnamon to Taste (Recipe #2): The cinnamon flavor can be quite bold, so start with less if you prefer a milder spice and build up after tasting.
- Use a Large Enough Saucepan (Recipe #3): The caramel mixture will bubble up significantly when adding cream and butter, so using a larger pan prevents dangerous overflow and ensures even cooking.
- Know the Serving Texture Differences: Recipe #1 stays soft and scoopable even when cooled, while Recipes #2 and #3 firm up—so plan to serve those warm for the best dipping consistency.

3 Delicious Caramel Dips

- 8 oz cream cheese
- ¼ cup sugar
- ¾ cup brown sugar
- 1 tsp vanilla extract

- 1 cup light corn syrup
- 1 tsp salt
- 2 cups heavy cream
- ½ cup butter at room temperature
- 1 tsp vanilla extract
Instructions
- Recipe#1 Caramel Sauce: In a saucepan, over medium heat, mix together the cream cheese, sugar, brown sugar, and vanilla extract until everything has melted. Stir regularly as the mixture melts. Serve this caramel sauce warm or chilled, this recipe does not harden when cooled like most other caramels. Serve immediately and enjoy!
- Recipe#2 Caramel Sauce: Start by combining the condensed milk and butterscotch chips in a medium saucepan, cook over medium heat for 3 minutes. Then add the salt, white vinegar, and cinnamon. Stir the mixture constantly until the ingredients have melted completely and heated all the way through. This caramel is best served warm, as it does harden when cooled. Serve immediately and enjoy!
- Note: This caramel sauce recipe has a very strong cinnamon flavor, which I really loved (and so did everyone else!). However, if you don't think you want it to taste quite so strong, start with half the given amount and taste test to see what you think. Be careful, it will be hot so make sure to bring the tasting sample to a cooler temperature before trying it.
- Recipe#3 Caramel Sauce: In a large saucepan, combine the white sugar, corn syrup, and salt. Bring this mixture to a boil and heat to 234-240 degrees F (soft ball stage). At this point, stir in the butter and heavy cream carefully, the mixture will bubble up. Be sure to use a large pan because this bubbles up quite a bit. I used a 3 ½ quart saucepan and it wasn't quite big enough. Continue to keep stirring and boiling the mixture until the temperature goes back up to about 240 degrees F. This takes about 10 minutes, if the temperature isn't going back up, just keep stirring and it will get there.
- Once it reaches 240 degrees F, immediately remove the pan from the heat and stir in the vanilla extract. Let the mixture cool for a few minutes before serving. This dip is best served warm, serve alongside your choice of dipping food and enjoy!
Notes
How long are homemade caramel dips good for?
These caramel dips are best stored in an airtight container in the refrigerator for up to 5–7 days. For serving, gently reheat (microwave in short intervals or warm on the stovetop) and stir until smooth and dippable again.
Freezing is not generally recommended for these dips, especially the cream cheese–based and condensed milk versions, as the texture can separate or become grainy after thawing. The classic caramel (Recipe #3) may freeze more successfully, but all versions are best enjoyed fresh or refrigerated.
