Pizzelle Cookies are crisp, thin, and beautifully simple—made with just seven ingredients like eggs, flour, vanilla, and butter. They’re light, delicate, and packed with amazing flavor.
These cookies were a staple growing up—another beloved “grandma” tradition in our family. My mom inherited my grandma’s pizzelle irons, so every Christmas season we wander over to their house, and at two minutes per cookie, we crank out hundreds. I’ve never found a substitute for these sensational cookies, and I’ve yet to taste another recipe that comes close to my grandma’s.
Why You Should Make Pizzelle Cookies
- They make great gifts. Pizzelle cookies are perfect for holiday gifting—they’re a timeless classic that never goes out of style.
- They’re lightly sweetened. Amid all the rich holiday foods and heavy desserts, these delicate, lightly sweet pizzelles are a refreshing balance. They’re crisp, light, and just sweet enough.
- You can add different toppings. Dust them with powdered sugar, sprinkle with cinnamon sugar, or drizzle with melted chocolate. The cookies are so simple and delicious that just about any topping tastes amazing.
Pizzelle Cookie Ingredients
Sugar: Using 15 TBSP of granulated sugar (just under 1 cup) adds the perfect sweetness.
Baking powder: Add 2 tsp baking powder gives the cookies a light lift.

Flour: You need 4-5 cups of all-purpose flour for the base of this cookie dough.

How do you store Italian Pizzelle Cookies?
Pizzelle cookies are delicate, so store them in a large container in flat layers with parchment between each one. Let them cool completely before stacking to prevent sticking. Kept in an airtight container at room temperature, they stay fresh for 3–5 days.
Can you freeze pizzelle cookies?
Yes, pizzelle cookies can be frozen. Once fully cooled, wrap them in plastic wrap and place them in an airtight container. They freeze well for up to 3 months and thaw in just a few minutes, though they will be more brittle than freshly made cookies.

When it comes to making pizzelle cookies, having the right equipment is crucial. In this section, we will provide a brief buying guide for pizzelle irons.
- Size: Pizzelle irons come in various sizes, from small to large. Consider the number of cookies you want to make and choose an iron that suits your needs.
- Shape: Pizzelle irons come in different shapes, such as round, square or flower. Choose the shape that appeals to you the most.
- Material: Pizzelle irons can be made of cast iron, aluminum, or non-stick materials. Cast iron irons are durable but heavy, while aluminum irons are lightweight but less durable. Non-stick irons are easy to clean but may not last as long as cast iron or aluminum irons.
- Price: Pizzelle irons can range from $20 to $100 depending on the size, shape, and material. Choose an iron that fits your budget.
Why are my pizzelle cookies soft instead of crisp?
Pizzelles soften if there’s too much moisture or if they’re undercooked. Cook them a little longer, let them cool fully on a wire rack, and store them uncovered for a few minutes to crisp up before packing.
Why do my pizzelles stick to the iron?
Sticking usually happens when the iron isn’t hot enough or if there’s not enough butter in the dough. Let the iron preheat fully, and lightly brush it with oil or cooking spray only if needed—especially with older stovetop irons.
