How to Make Honey Oat Bread
I love having bread with dinner, but don’t always have a ton of time to make a yeast bread. I found this fantastic honey Oat Quick Bread that’s made with a majority whole wheat flour and the good news is it’s done in about an hour!
This recipe calls for dough enhancer, which can be found at most large grocery stores. It’s an easy addition to homemade breads that really improves the texture. Look for it in the baking aisle next time you’re shopping! Even with the dough enhancer though, I think this bread’s best eaten the day you bake it.
AVOID SUNKEN BREAD
The easiest and best way to avoid sunken bread is to use a cooking thermometer to check the inside of the loaf. Fully cooked bread will register 200°F on a thermometer. My all-time favorite thermometer is the Thermapen. It’s super fast and incredibly durable. Another great cooking thermometer is the ThermoPop which is a more basic version that works just as well!

Can You Freeze Honey Oat Bread?
Yes! Absolutely! This bread freezes very well. Just wrap a fully cooled loaf in plastic wrap and then place it in an airtight container like a plastic bag and keep it in the freezer until a few hours before you want to eat it. Then pull it out and let it thaw on the counter until it comes to room temperature.
What Kind of Oats Should I Use?
I recommend using a steel cut or old fashioned oat for this bread as it not only looks pretty on top but it also adds nutrition and texture that you can’t get from a softer cut of oat like quick cook or instant.
Honey Oat Quick Bread Ingredients
-1 cup oats
-2 cups whole wheat flour
-1 cup all-purpose flour
-1/4 cup honey
-1 tsp baking soda
-1 tsp cream of tartar
-3/4 tsp salt
-1/4 cup butter, cold, cut into small pieces
-1 egg
-1 1/3 cups buttermilk (or milk + 1 TBSP lemon juice)
-1/4 cup dough enhancer
How to Make Honey Oat Quick Bread
Preheat your oven to 375 degrees F. Spray nonstick cooking spray on a baking sheet.
In a bowl, mix together the oats, flours, honey, baking soda, cream of tartar and salt. Cut in butter using 2 knives or with a pastry cutter.
In a separate bowl, beat the egg in with the milk. Slowly add the egg mixture to the dry mixture, while stirring.
Once the dough is well mixed, turn it out onto a floured countertop. Sprinkle more flour on top of the bread dough. Knead the dough lightly, until you’ve managed to shape it into a nice circle. {About 7″ in diameter} The dough is sticky, so you don’t want to knead it a ton or you’ll have to keep adding flour, which will dry out the bread. This whole process of kneading and shaping shouldn’t take more than a couple of minutes.
Transfer the bread to the cookie sheet. Cut 2 quick lines in the top of the bread in an X shape. Brush the bread with a little milk and then sprinkle with additional oats.
Bake in a preheated oven for 35-50 minutes, or until a toothpick inserted in the center comes out clean.
I know 35 to 50 minutes is quite the spread and the time it requires to bake really depends on the shape. My loaf was a smaller in diameter circle, so it took the full 50 minutes to cook. If you want it to cook in less time, shape the dough into more of a loaf- longer instead of taller and it will cook faster.
