This blueberry crumble bar recipe is a wonderful dish to serve any time of day, serve it up for a special breakfast treat or have it for dessert in the evening. I have begun replacing butter or margarine with coconut oil in many of my recipes because it is a much healthier option. The difference in taste is so light, the baked goods tend not to stick and the recipe has a ton less cholesterol. I will pretty much do anything to create healthier options so I can still enjoy the treats I love. Try it- you will not be disappointed. These are the BEST blueberry crumble bars.
Blueberry Crumb Bars ingredients
Crumb Topping:
-Butter: You will need 6 tablespoons of unsalted melted butter. This will help to bind together the dry streusel ingredients.
-Brown sugar: Use ½ cup of light brown sugar that has been packed into the measuring cup, this will give the crumb topping a lovely sweet flavor.
-Flour: You will need 1 cup of all-purpose flour for the base of the crumble.
-Salt: To enhance the flavors add in ¼ teaspoon of salt.
Blueberry Filling:
-Coconut oil: You will need ½ cup of room temperature coconut oil, this is important to keep the integrity of this healthier treat option.
-Flour: Use ¾ cups of all-purpose flour for the thickener. Make sure to spoon and level the flour into the cup for the best measurement accuracy.
-Salt: Use ¼ teaspoon of salt to help bring out the natural flavors in this recipe.
-Baking powder: Use ½ teaspoon of baking powder to help the bars puff up nicely as they bake.
-Powdered sugar: You will want 1 cup of powdered sugar to lend its sweetness while keeping the consistency soft.
-Vanilla: Use ½ teaspoon of vanilla extract to help make this dessert taste incredible.
-Eggs: Bind together the dough with 2 large eggs.
-Blueberries: You will want 1 ½ cup of fresh blueberries so that this treat is packed with delicious flavor in every bite.
How to make blueberry crumble bars
Prep
Preheat your oven to 350 degrees F. Then, line the inside of an 8×8 baking dish with parchment paper or spray with non-stick cooking spray.
Make the crumble topping
Mix together all of the ingredients, the melted butter, brown sugar, flour, and salt. Combine with a fork until large moist crumbs form.
Place the topping into the freezer until ready to use. This will help the crumble to retain the desired shape.
Next, wash the fresh blueberries and set them aside on a paper towel to dry.
Making the batter
Whisk together ¾ cups of flour, baking powder, and salt in a medium-sized mixing bowl. Set aside.
Then, in a large bowl, using a handheld electric mixer, cream together the coconut oil, powdered sugar, and vanilla extract until light and fluffy.
Next, add in the eggs, one at a time. Beat well after each addition.
Reduce the speed to low and mix in the flour mixture.
Assemble
Proceed to spread the batter evenly into the prepared baking pan and then sprinkle the top with your fresh blueberries.
Remove the crumble topping from the freezer and sprinkle over the top of the batter and blueberries. Spread it evenly over the entire pan, you want to make sure each bite has this delicious layer.
After that, put in the oven and bake for 40-45 minutes, until golden in color, and a toothpick, can be inserted into the center, and only come out with a few moist crumbs.
Let it cool completely in the pan.
Serve
Using the parchment paper overhang, lift the cake out of the pan and onto a flat surface.
Cut into 16 same-sized squares.
Serve warm and enjoy! If you want to kick this treat up a notch, serve with whipped cream or vanilla ice cream on top.

Can I make berry crumb bars with any berry?
Yes, you can swap out the fresh blueberries for other tasty seasonal berries if desired. I think blackberries, strawberries, raspberries, or any combination of mixed berries would work perfectly for this recipe. If you choose a larger berry just be sure to cute it into small pieces to achieve the best results.
How long are blueberry streusel bars good for?
These bars are good for about 3-5 days if kept stored in an airtight container in the fridge. This should give you plenty of time to enjoy them with the family. If desired you can reheat your slice in the microwave (on a microwave-safe plate) to get back some of that fresh from the oven warmth that makes these bars so incredible.
Can I freeze crumble bars?
You sure can! These can be stored and froze for up to one month, after that the crumble topping will start to loose the desired consistency. Be sure to store in an airtight container, keep the freezer burn from ruining this tasty treat.
