Made with rich cocoa, mini chocolate chips, and a fudgy, buttery base, they’re topped with a refreshing mint frosting and a silky chocolate layer that we can’t get enough of. Every St. Patrick’s Day, my kids and I gather in the kitchen to bake and frost them together, and they always disappear faster than I can cut them. Tips & Tricks for making Easy Mint Brownies
- Don’t overmix the batter: Once you add the flour and mini chocolate chips, gently fold them in—overmixing can make the brownies dense instead of fudgy.
- Frost while the brownie is slightly warm: Pouring the mint frosting over warm brownies helps it spread evenly and sink slightly into the surface for extra creamy flavor.
- Chill between frostings: After spreading the mint frosting, refrigerate for at least 30 minutes before adding the chocolate layer so the flavors stay distinct and the layers don’t blend together.
- Use a sharp knife after freezing: To get clean, perfectly shaped brownie squares, freeze the fully cooled and frosted brownies for about 30 minutes, then slice with a thin, sharp knife.

Best Mint Brownie Recipe
Ingredients
- 1 cup sugar
- ½ cup butter softened
- 2 eggs
- 1 tsp vanilla extract
- ⅓ cup cocoa powder
- 3 TBSP milk
- ½ cup all purpose flour
- ¼ tsp salt
- ½ cup mini chocolate chips
Mint Icing ingredients
- 3 TBSP butter melted
- 2 TBSP milk
- 1 ½ cups powdered sugar
- ½ tsp mint extract
- 2-3 drops green food coloring
Easy Chocolate Frosting ingredient
- 3 TBSP butter
- ¼ cup chocolate chips
- 2 TBSP milk
- 1 cup powdered sugar
Instructions
- Preheat oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside.
- Whisk together the sugar and butter. Add the eggs, vanilla extract, cocoa powder, and milk. Whisk again until smooth.
- Stir in the flour, salt, and mini chocolate chips, until the flour is well incorporated.
- Bake for 30 minutes, until brownies are set. Remove from oven and let cool for 20 minutes before frosting.
- Mint frosting: Combine all the ingredients and whisk until smooth. Pour over cooled brownies. Gently spread frosting over the entire surface. Chill in the refrigerator for 30 minutes.
- Chocolate frosting: Combine butter, chocolate chips and milk in a bowl. Microwave for 45 seconds. Add powdered sugar and whisk until smooth. Pour the frosting on top of the mint frosting. Let fully cool to set. Slice, serve, & enjoy!

How long are these Mint Chocolate Brownies good for?
Stored in an airtight container at room temperature, they stay fresh for about 3–4 days. In the fridge, they can last up to 1 week, which also helps keep the mint and chocolate frostings firmer.
These brownies also freeze really well. Wrap them tightly in plastic wrap and place in a freezer-safe container or bag. They can be frozen for up to 2–3 months. I made this recipe but due to health issues I made it gluten free and keto. It turned out great! I think it could have been cooked like 2-5 minutes less that the recipe instructions say but my oven is kinda on the hot side. Really good! Used gluten free flour and Swerve sugars as well as no sugar mini chocolate chips! I will definitely make again!

My 7 year old daughter and I made these. She was certain that they would be good because they were “5 star”. She just tasted them and said, ” Delicious, definitely 5 star!!” These are incredibly decadent. We added some green and white sprinkles to the top with a circle of yellow sprinkles to represent the pot of gold for St. Patty’s day! We also made them gluten-free by substituting King Arthur GF flour for the all-purpose flour and had great results. This is a great one to make with kids because there is a lot of measuring and stirring and lots of steps to help out on.! One thing I wasn’t completely sure about was if there was a difference between peppermint and mint extract. We had peppermint on hand so that is what we used but I was curious if there was a difference. Thanks for this recipe, I will definitely make these again.
