Making Low Calorie Double Fudge Muffins
I’m always on the lookout for simple breakfast and snack recipes that are healthy and appealing for kids. OK, I want them to appeal to me as well, but sometimes my kids are easier to please than I am! These muffins certainly fit the bill. They have chocolate, so my kids are sold. The fact that they have whole wheat flour, lower amounts of sugar and 3 bananas makes them a winner in my book.
The original recipe I used was for “100 calorie” muffins. I put my spin on them and the result was more around the 200 calorie mark. Still not too bad! Plus you don’t have to eat 3 to feel satisfied. 😉
I love, love, love using coconut oil in muffin recipes because it helps the muffin to not stick. If you use the foil muffin liners like I did, they peel away perfectly. I think it’s so frustrating when 1/4 of the muffin sticks to the liner!
Can I use more chocolate chips?
Absolutely! Just note that the more chocolate chips you use, the more calories are added to each muffin. To keep them under 200 calories, 1/2 cup is ideal but 1 cup is only 265 calories per muffin. Personally, I feel that ½ cup of chocolate chips is perfect for this recipe (that’s about 188 calories per muffin).
How long do fudge muffins last?
In this house, not long! Haha! Honestly though, if you keep these muffins in an airtight container or Ziploc bag, you can expect them to last up to a week at room temperature. For best results, eat the while fresh so they’re moist and delicious.
Under 200 Calorie Double Fudge Muffins Ingredients
Here’s what you’ll need to make these:
-2 eggs: used for leavening and texture
-melted coconut oil: I love using coconut oil in muffin recipe since it adds great flavor, is a healthy fat and helps the muffins not stick!
-brown sugar: brown sugar is more sweet with less sugar than traditional granulated sugar, so it’s a great choice for this recipe
-1/2 cup applesauce: Applesauce replaces some of the oil used in conventional muffin recipes. You can use one of those little snack cups of applesauce!
-Vanilla extract: Vanilla flavor makes any sweet recipe sing so I suggest using a good quality vanilla extract or a Vanilla Bean Paste. I linked my favorites!
-mashed ripe bananas- you’ll need about 2-3, depending on size. The riper the better as really ripe bananas are super sweet.
-whole wheat flour: you can’t even tell it’s whole wheat flour in this recipe!
-baking soda, baking powder, & salt: leavening agents and flavor enhancer
-1/4 cup cocoa powder: this is where part of the chocolate flavor comes from. I also think brand named cocoa powder taste better!
-1/2 cup semi sweet chocolate chips: you can use more, but these are just a fun addition to the chocolate muffins
How to Make 200 Calorie Fudge Muffins
Preheat your oven to 350 degrees and line a muffin pan with foil liners.
Whisk together the eggs, coconut oil, sugar, applesauce, vanilla and bananas in a bowl.
Add in the dry ingredients and then mix them until they’re just combined.
Depending on how many chocolate chips you use, add some to the batter and reserve some for sprinkling over the top before baking.
Divide the batter into the 12 muffin cups and then top with chocolate chips.
Bake for 25 minutes and then cool and enjoy.
UNDER 200 CALORIE DOUBLE FUDGE MUFFINS
Ingredients
- 2 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup brown sugar
- 1/2 cup applesauce
- 1 tsp vanilla
- 1 cup mashed banana (about 2-3)
- 1 1/2 cups whole wheat flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 cup cocoa powder
- 1/2 cup semi sweet chocolate chips (you can use more)
Instructions
- Preheat oven to 350 degrees F. Line a muffin pan with foil liners.
- Whisk together eggs, coconut oil, sugar, applesauce, vanilla and bananas in a medium sized mixing bowl.
- Add in the dry ingredients and mix just until combined. Depending on how much chocolate chips you're using, add some to the batter. (I used 1 cup and I added a little over half to the batter, then sprinkled the rest on top, prior to baking.)
- Divide batter into the 12 muffin cups. Top with chocolate chips. Bake 25 minutes. Cool and enjoy!

What is the difference between chocolate muffins and cupcakes?
Muffins are a more savory and less sweet snack. The texture is usually a little dryer and denser than a cupcake. You also usually don’t frost muffins whereas you’d most definitely frost a chocolate cupcake!
Can I freeze healthy fudge muffins?
Yes, you can freeze these fudge muffins. Just let them cool completely and store them in an airtight container or plastic baggie in the freezer for up to 3 months. To eat, just let them thaw at room temperature for a few minutes before taking your first bite and you’ll be good.
