Ingredients for Baked S’mores Bars
Butter: You will need 1 stick of butter to make the graham cracker cookie crust rich and flavorful.
Brown sugar and sugar: Add ¼ cup of brown sugar and ½ cup of granulated sugar for perfectly sweet and chewy treats.
Egg: Use 1 large egg to help to bind the ingredients together well.
Vanilla: Adding 1 teaspoon of vanilla extract will help enhance the flavors in the cookie crust. The higher the quality of the extract, the better.
Flour: 1 ⅓ cups of all-purpose flour is the structural base of this cookie crust recipe.
Salt: Just ¼ teaspoon of salt will balance all the amazing flavors nicely.
Graham cracker crumbs: You need ¾ cup of graham cracker crumbs. You can cheat like I often do and use the box of crumbs that have already been crushed for you, or you can easily make your own crumbs. You will need about 5-5 ½ full graham crackers to make the correct amount of crumbs.
Baking powder: 1 teaspoon of baking powder is the leavening agent in the cookie crust.
Hershey chocolate bars: Use 4-5 regular sized Hershey bars for the classic smores flavor we all know and love. You will break them into individual pieces and place them in a single layer across the crust.
Marshmallow creme: You will need one 7-oz container of marshmallow creme, which is about 1 ½ cups, for the traditional sweet & sticky center.
How to make Oven Baked S’mores Bars
Prep
Begin with preheating the oven to 350° F and then grease an 8X8 or 9X9 pan. Set it aside.
Also, prepare the graham cracker crumbs. Place 5-6 full crackers in a zip locked bag and use a rolling pin to crush them. Or you can use a blender or food processor for this step as well, whatever you prefer.
Crust dough
In a large bowl, cream the butter and both sugars together using an electric mixer. Then add in the egg and vanilla extract, mix to combine.
Next, in a separate bowl, whisk the flour, graham cracker crumbs, baking powder and salt.
Proceed to add the dry mixture to the butter mixture, mix at a low speed until well combined.
Assemble
Divide the dough in half and press half of it into the bottom of your prepared pan.
Then place the chocolate bars evenly over the top of the dough, continue to spread the marshmallow fluff evenly over the chocolate layer.
The easiest way that I’ve found to make the top layer is to place the second half of the dough in a large ziplocked bag and roll it out until it is about the size of your pan.
Use scissors to cut both long sides of the bag and pull up the top layer. Place the bag, dough side down on top of the marshmallow fluff and then peel the bag up.
Bake
Place the pan in the preheated oven and bake for about 30-35 minutes.
If you want to cut this into nice, neat looking bars, wait until it has cooled to cut. In our house, we prefer this warm, so we eat it straight out of the oven in not-so-pretty spoonful’s!

When to serve Baked Smores Bars
This makes a delicious treat for any night of the week but you can just as easily let them cool and then slice them into serving sized squares for a camping or woodlands themed party. Serve at your next slumber party and watch how quickly these treats disappear!
How long are Baked S’mores Bars good for?
Baked S’mores Bars are good for up to 4-5 days if stored in an airtight container at room temperature. You can eat them at room temperature, but I think they taste so much better if you heat them up before eating. Microwave one serving for about 15-20 seconds and it’ll be perfect!
Can you swap out the Hershey bars?
Regular Hershey bars work best, but you can definitely use a different type of chocolate if you prefer. You can use dark chocolate Hershey bars or you can even just use chocolate chips. Semi-sweet or milk chocolate chips work great!
Can I use marshmallows instead of fluff?
I have not tried the recipe with marshmallows instead of fluff but I think it would work well to swap them for one another. Give it a try and let me know in the comments how it works!
HOW DO YOU SOFTEN BUTTER?
I like to soften butter by using the defrost function on my microwave. If you need the full 1/2 cup cube of butter, you can leave it in the paper wrapper, otherwise, place the amount of butter you need in a glass or porcelain bowl. I use the lowest defrost setting on my microwave and just let it run for 20 seconds. Check the butter and see how soft it is by pressing it with a rubber scraper. If it is still not soft to the touch, meaning it doesn’t indent when you press into it, let it warm for another 5-10 seconds. Watch it closely! Butter softens very quickly.
