Yep,they are delicious and I made them with products I found inside the box…

First, I started with a shiny, new Nutri Ninja with Auto IQ – it’s a nutrient extractor and high performance blender in one! If you love making smoothies, the Nutri Ninja is a fantastic small appliance to have in your kitchen. I love how easy it is to use and hello, those tiny little suction cups that hold it in place are super helpful! I used it to first blend my old fashioned oats into a flour-like consistency, then I added the remaining ingredients and behold- pancake batter! Love it. I chopped apples with a handy paring knife from a Chicago Cutlery Knife Set. I’m preparing food constantly (did I mention I have 5 kids?!) and I’ve decided you can never have too many knives. I love a good, versatile paring knife, but it’s also great to have some serrated knives on hand too. This Chicago Cutlery set has something for every recipe- a perfect-sized 3.5″ paring knife, a sandwich spreader, fruit/vegetable knife and an all-purpose utility knife. Take your pick! I also love the bright colors.
I sat down and enjoyed my breakfast with a cup of Signature Tea Company camomile tea. I had a hard time deciding between camomile and peppermint, but ultimately I chose camomile and it was perfect. Just enough flavor to enjoy it, but still calming and comforting- exactly what I look for in a cup of camomile. I adore tea. You can find a variety of Signature Tea Company flavors at Walmart stores everywhere.
Pumpkin Pancakes with Cinnamon Apples
- 1 1/2 cups old fashioned oats
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- 2 eggs
- 1/3 cup pure pack pumpkin
- 3/4 cup milk (any type- your choice!)
- 2-3 TBSP honey
- 1/2 tsp salt
Cinnamon Apple topping:
- 2 apples, peeled and diced
- 2 TBSP honey
- 2 TBSP water
- 1/2 tsp cinnamon
- 1/2 tsp cornstarch
Add oats to regular 24-oz Nutri Ninja cup. Blend until oats look like flour- I just put it through an Ultra Blend cycle and pulsed a few times.
Add in remaining ingredients in order listed. Blend for an additional minute. (Again, I just used the Ultra Blend cycle, then pulsed a few times.)
Preheat griddle to about 350 degrees F. Pour about 1/3 cup of batter for each pancake. Flip after 2-3 minutes, once pancakes look dry around the edges. Cook an additional 2 minutes.
To make the cinnamon apples: Combine all ingredients in a small microwaveable bowl and stir. Microwave for 1 minute 30 seconds. Stir again.
Plate cooked pancakes and top with cinnamon apples and a dusting of powdered sugar, if desired.
After breakfast I used my new Rubbermaid 5-Cup Premier Food Storage Container to package up my leftover pancakes. I love this size- it’s so versatile. Rubbermaid containers are my favorite because they’re just such great quality. These containers have new Flex & Seal™ lids that are not only easy to seal and remove, but they snap to the base of the container- as well as other lids! It certainly makes for easy storage. Love the pretty look of it too.
I labeled my pancakes with a Sharpie Extreme permanent marker. Sharpie Extreme delivers bold color and can be used on most surfaces, including plastic, glass and wood. They have high contrast ink that resists fading. I always like to have Sharpie markers on hand. I plan to use these next to label my kids’ jackets, backpacks and lunch boxes! Sharpie Extreme markers are available at Walmart, Target, Office Depot and Office Max.
Shout-out to Scotch as well for their super cute Washi tape! It just adds some fun to an otherwise boring task, now doesn’t it?
