Blueberry Jello Salad
This simple jello recipe begins with raspberry (or strawberry Jello) that is mixed with a can of blueberry pie filling for a delicious double berry flavor. The sweet and creamy layer on top is simple, but complements the gelatin layer so well. Add some more berries on top to make the salad festive, patriotic and impressive enough to take to a party!
Ingredients in Blueberry Jello Salad
Jello – You will need 1 large box and 1 small box of raspberry Jello. You can use strawberry instead if you prefer, or you can make some sort of combination of the two. Anything berry flavored works great!
Boiling water – You will need 3 cups of boiling water to add to the Jello. I usually boil water in the microwave, but the stovetop works great too!
Blueberry pie filling – A can of blueberry pie filling provides the blue color and the blueberry part of the jello. If you don’t like blueberry, you can use raspberry pie filling instead.
Crushed pineapple – An 8 ounce of can of crushed pineapple adds a lot of sweetness and flavor. Make sure that the pineapple is well drained.
Cream cheese, softened – Any type of cream cheese works great (regular, low-fat or non-fat). You can even use strawberry flavored cream cheese for a slightly different twist!
Sour cream – You can swap out the sour cream with plain Greek yogurt or even vanilla Greek yogurt if you’d like.
Vanilla – Just a teaspoon of vanilla adds the perfect amount of flavor to the cream topping.
Cool Whip – A cup of Cool Whip whipped topping lightens up the creamy layer.
Sugar – Just a half cup of sugar will sweeten up the cream topping.
Fresh berries – Raspberries, strawberries, blueberries and blackberries all look beautiful on the top!
How to make Blueberry Jello Salad
In a large bowl, add the boiling water to the Jello. Mix until Jello is completely dissolved and then cool for 5-10 minutes.
Stir in the blueberries and the pineapple and pour into a 9X13 pan. Place in the refrigerator until set, about 4 hours.
To make the topping, beat the cream cheese, sour cream, vanilla and sugar with an electric mixer until smooth. Add the Cool Whip and fold in with a spoon until well combined.
Spread the topping over the gelatin layer and refrigerate until ready to serve. Top with fresh berries if desired.

CAN YOU REPLACE THE COOL WHIP IN BLUEBERRY JELLO SALAD?
If you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well when mixed into the jello salad. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!
See Homemade Whipped Cream recipes here.
HOW DO YOU MAKE STABILIZED WHIPPED CREAM?
To make stabilized whipped cream, you will need the following ingredients:
- 4 ounces of cream cheese (softened to room temperature)
- 1/3 cup powdered sugar
- 1 tsp vanilla
- 1 cup heavy whipping cream.
- Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
- In a separate bowl, beat the whipping cream just until soft peaks form.
- Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.
A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
WHAT KIND OF CREAM CHEESE TO USE?
I usually use regular cream cheese, but you can also use a low-fat or non-fat variety in cheesecake. Just make sure it is softened to room temperature before adding to the recipe.
HOW TO SOFTEN CREAM CHEESE
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
