Easy Peach Pie is made with a very simple pie crust, and the filling is made with tons of fresh peaches, peach Jell-O, Sprite and a little bit of sugar. This is one of the easiest (and yummiest) pies you can make!
Easy Peach Pie is the perfect way to use up all of those fresh peaches that are so abundant this time of year! I couldn’t believe that the recipe called for Sprite since I’ve never put that in a pie before, but the results were so yummy and of course my kids were excited to try a dessert that had soda in it (since soda is a pretty rare treat around our house)! The peach Jell-O adds an even stronger peach flavor to the filling and helps the filling to set up to the perfect consistency too!
I do a lot of baking, but for some reason, pies have always intimidated me. They just seem like a lot of work – especially if you have to make a homemade crust. Which is kinda funny considering the ingredients in a pie crust are so basic – it seems like it should be super easy to do! This pie crust is actually a little bit different than most, and that’s a good thing because it’s easier to work with than a traditional pie crust where you have to cut in the butter/shortening. This pie crust has a consistency that is a little bit more moist and is closer to cookie dough which makes it easier to stir and to shape!
EASY PEACH PIE
PIE CRUST
- 2 cup flour
- 2 sticks butter, softened to room temperature
- 4 Tbsp sugar
PIE FILLING
- 1 1/2 cups sugar
- 4 Tbsp corn starch
- 2 cups Sprite
- 3 oz. pkg. peach Jell-O
- 6-8 cups peeled, sliced and chopped peaches
CRUST:
- Mix the butter and sugar together until smooth and then add the flour, mixing until well combined. Pat down along the bottom and sides of two pie plates. Bake at 350 for 12-15 minutes, or until very lightly golden brown. Let cool while making the filling.
FILLING:
- In a medium saucepan, add sugar and cornstarch to Sprite and whisk together over medium-high heat. Bring the mixture to a boil, stirring constantly. Boil until the mixture starts to go clear and thicken up while continuing to stir.
- Add the Jell-O and boil for one minute longer. Remove from heat and let the mixture cool for about 20 minutes. (If you want the color to be slightly more intense, you can add a few drops of yellow food coloring at this point.)
- Add the peaches to the filling mixture and stir gently just until combined. Pour the filling into the prepared pie crusts and put in the refrigerator to set up. The pies will take about 6 hours to fully set. Enjoy!

If fresh peaches aren’t available, would thawed frozen peaches or canned peaches work? If so, which one would be better?

I would probably try canned peaches. Just make sure to drain them really well!
