Sugar: To sweeten the ice cream, add 1 cup of granulated sugar.
Mint extract: Adding in 1 ½ teaspoons of mint extract will give this dish a traditional taste. Note that this is NOT peppermint extract, you will want pure mint extract.
Chocolate: For scattered chocolate pieces throughout the dessert, use 1-2 ounces of chocolate that has been grated into smaller pieces. I put mine in the fridge for about 5 minutes, then just grated a couple of squares by hand.

Prep

Not all brands are created equal! I actually had 2 different kinds on hand when I made this the first time, and one had twice the fat content of the other. While fat is not something that you want swimming around in all your foods, for ice cream, fat means that creamy consistency that everyone loves. So go for Thai Kitchen Unsweetened coconut milk- it works best for this recipe.
Also, if you want to jump-start the whole freezing- thickening process, put the cans of coconut milk in the fridge for a few hours prior to mixing.
How long is homemade ice cream good for?
This ice cream can be kept stored in an airtight container for up to 2 weeks or longer. You’ll want to enjoy the ice cream sooner rather than later because as it ages it may develop little ice crystals and flavor loss but if you have a great storage system in place, you may be able to get it to last even longer.

Sure- You can substitute in rice milk or soy milk for the coconut milk. Your "ice cream" will just have an icier texture to it since there's less fat. I bet your son won't mind at all though!
